- 16 oz chicken breasts(totally helps to pound chicken flat for even cooking)
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tbs olive oil
- 1 tablespoon, Light Butter
- 8 oz, penne pasta
- 1 medium onion, sliced
- 2 tbsp Dried thyme
- 2 tbsp basil
- 1 tablespoon Tomato paste
- 1 cup fat fee half & half (divided)
- 2 tbs All Purpose Flour
- 1/2 cup dry White wine
- 1/3 cup Parmesan cheese
- cook pasta according to package directions snd drain
- heat olive oil in pan
- season chicken with salt, pepper and garlic powder
- sear chicken for 7 minutes each side
- remove from skillet and cut into chunks
- in same skillet, deglaze pan with a splash of wine and melt butter over medium heat; sauté onion until lightly browned, 8-10 minutes. Add herbs; cook and stir 1 minute. Add 1/2 cup cream, wine and tomato paste; cook and stir until blended.
- Mix flour and remaining 1/2 cup cream until smooth; gradually stir into onion mixture. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in 1/3 cup cheese. Stir into pasta and add chicken back in. Heat on medium for a few minutes to warm everything back up.
