Chicken With Blush Sauce

  • 16 oz chicken breasts(totally helps to pound chicken flat for even cooking)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tbs olive oil
  • 1 tablespoon, Light Butter
  • 8 oz, penne pasta
  • 1 medium onion, sliced
  • 2 tbsp Dried thyme
  • 2 tbsp basil
  • 1 tablespoon Tomato paste
  • 1 cup fat fee half & half (divided)
  • 2 tbs All Purpose Flour
  • 1/2 cup dry White wine
  • 1/3 cup Parmesan cheese
  1. cook pasta according to package directions snd drain
  2. heat olive oil in pan
  3. season chicken with salt, pepper and garlic powder
  4. sear chicken for 7 minutes each side
  5. remove from skillet and cut into chunks
  6. in same skillet, deglaze pan with a splash of wine and melt butter over medium heat; sauté onion until lightly browned, 8-10 minutes. Add herbs; cook and stir 1 minute. Add 1/2 cup cream, wine and tomato paste; cook and stir until blended.
  7. Mix flour and remaining 1/2 cup cream until smooth; gradually stir into onion mixture. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in 1/3 cup cheese. Stir into pasta and add chicken back in. Heat on medium for a few minutes to warm everything back up.
