CREAMY ITALIAN CHICKEN

  • 1 italian dressing mix packet
  • 1 clove Garlic, minced
  • 1 small onion, sliced
  • 1/2 cup of dry white wine, devided
  • 1 tsp Black pepper
  • 1 tsp Salt
  • 4 OZ 1/3 less fat cream cheese, softened
  • Fat free Cream of Mushroom Soup 1 Can
  • 6 Chicken thigh, raw, skinless
  • 1 tbs light butter
  • 1 tbs olive oil
  • Instructions 
  • In a small bowl whisk the 1/2 the seasoning pack, cream cheese, cream of mushroom soup and 1/4 cup of wine. it doesn’t have to be super incorporated.
  • Heat butter and olive oil in a skillet. Season the chicken with salt, pepper and half of the spice mixture. Place the chicken in the skillet and sauté for 8-10 minutes flipping halfway through
  • Remove chicken from the skillet and onto a plate.
  • deglaze pan with rest of wine.
  • Add onion, sauté for 5 minutes (wine should be reduced to almost nothing at this point), add garlic, sauté for 1 more minute
  • Add in the cream cheese mixture and stir until the cream cheese is fully incorporated and the sauce is creamy. Nestle the chicken into the sauce.
  • Cover pan and cook on low-ish until temp reaches 165 degrees
  • Sprinkle with parmesan cheese
