- 1 italian dressing mix packet
- 1 clove Garlic, minced
- 1 small onion, sliced
- 1/2 cup of dry white wine, devided
- 1 tsp Black pepper
- 1 tsp Salt
- 4 OZ 1/3 less fat cream cheese, softened
- Fat free Cream of Mushroom Soup 1 Can
- 6 Chicken thigh, raw, skinless
- 1 tbs light butter
- 1 tbs olive oil
- Instructions
- In a small bowl whisk the 1/2 the seasoning pack, cream cheese, cream of mushroom soup and 1/4 cup of wine. it doesn’t have to be super incorporated.
- Heat butter and olive oil in a skillet. Season the chicken with salt, pepper and half of the spice mixture. Place the chicken in the skillet and sauté for 8-10 minutes flipping halfway through
- Remove chicken from the skillet and onto a plate.
- deglaze pan with rest of wine.
- Add onion, sauté for 5 minutes (wine should be reduced to almost nothing at this point), add garlic, sauté for 1 more minute
- Add in the cream cheese mixture and stir until the cream cheese is fully incorporated and the sauce is creamy. Nestle the chicken into the sauce.
- Cover pan and cook on low-ish until temp reaches 165 degrees
- Sprinkle with parmesan cheese
